Pasta al Pomodoro




Listen I know I haven't blogged in a while but I just got bored. And well I am still trying to decide if I should keep this blog or just combine the two I have. Hmmm decisions.

Any way let's talk about pasta for a moment. My family loves pasta night we probably have it at least two nights a weeks. Last night I thought I was going to make regular old spaghetti but then I spotted this recipe on Bon Appetit and I am so glad I did! It was wonderful. The thing I like most about this recipe is that you cook your pasta in the sauce for the last two minutes. Cooking it like this made the pasta take on so much flavor! We topped it with some mizithra cheese (such a brilliant idea) and had bread and salad on the side and it was perfect. Even my kids liked it!

Here it is.....

Pasta al Pomodoro
Serves 4


Ingredients
•1/4 cup extra-virgin olive oil
•1 medium onion, minced
•4 garlic cloves, minced
•1 pinch crushed red pepper flakes
•1 28 oz. can peeled tomatoes, puréed in a food processor
•Kosher salt
•3 large fresh basil sprigs
•12 oz. bucatini or spaghetti
•2 Tbsp. cubed unsalted butter
•1/4 cup finely grated Parmesan or Pecorino
Preparation
•Heat extra-virgin olive oil in a 12" skillet over medium-low heat. Add minced onion and cook, stirring, until soft, about 12 minutes. Add garlic and cook, stirring, for 2-4 minutes. Add crushed red pepper flakes; cook for 1 minute more. Increase heat to medium, add puréed tomatoes and season lightly with kosher salt; cook, stirring occasionally, until sauce thickens slightly and the flavors meld, about 20 minutes. Remove pan from heat, stir in basil sprigs, and set aside.
•Meanwhile, bring water to a boil in a 5-qt. pot. Season with salt; add spaghetti or bucatini and cook, stirring occasionally, until about 2 minutes before tender. Drain pasta, reserving 1/2 cup pasta cooking water.
•Discard basil and heat skillet over high heat. Stir in reserved pasta water to loosen sauce; bring to a boil. Add pasta and cook, stirring, until sauce coats pasta and pasta is al dente, about 2 minutes. Remove pan from heat; add butter and cheese; toss until cheese melts. Transfer to warm bowls; serve with more cheese, if desired.

Another thing I did was I used a can of crushed tomatoes with basil in them (I just had some in the pantry) instead of doing the tomatoes in the food processor...I thought it worked good and it saved me a step.

Have a Happy Easter




My dear friends what are you doing for Easter weekend? Honestly I am not much in the Easter spirit since it has been so wet and cold in The SLC. I am however very excited to dress the little one in her easter dress and I'm excited to eat some yummy food...I'm making some buttermilk waffles my dear friend Amber made here. Lets just pray for a little bit of sun this weekend. Have a good one!

While we are speaking of hair...I am in a "I have no idea what to do with my hair" faze. I was so pleased with it only months ago and now well I just don't know. Oh well. I am thinking I will grow it out a bit and go from there. We'll see....sometimes it is just too easy to just keep chopping.

baby cuteness

My baby is no longer a baby anymore. She is at the sassy age of two...which I love by the way. Last night she was walking around the house wearing red high heels and a pretty pink necklace...so cute. Shane turned to me and said "who is this kid?" I find myself wondering the same thing. With that said I still really like to look and baby clothes and think about the time (not long ago I might add) that I had a baby to dress in cute clothes like this....

can you use the word AMAZING enough??


Tomorrow is my 27th birthday. I am feeling pretty positive about 27...I mean I am turning 27 on the 27th something amazing is going to happen, but if nothing else I would just like to feel amazing again...like I did when I was like 19....but I am a lot cooler now. So to help me feel more amazing I did some yoga last night for the first time. Let me tell you yoga is as amazing as everyone says is it is. I never wanted to try it because I thought that it was too new age-y and too hippy-ish but really it's not. So happy birthday to me and happy new beginning to me! This is going to be my year! I hope.

Also I want to give my little girl Addy a birthday shout out too! She is turning 2 tomorrow! Isn't cool that we have the same birthday??
